Small Scale Farming

Course Description

This on-farm course is the hands-on application to the preceding introductory classes in the program. This course will be an experiential introduction to small-scale farming techniques with emphasis on horticultural science including comprehensive and profitable guidelines. Using the Student Organic Farm at the Elgin campus as our lab we will address organic management practices of specialty crops, including: crop planning, field preparation, greenhouse management, daily cultivation responsibilities, irrigation, harvest and post-harvest handling. Topics include herbs, fruit, nut and vegetable crop production as well as planning strategies for efficiencies and profit building. 2016 marks the first year of the campus farm and this group of students will be a part of creating the initial systems and infrastructure at a raw site that has been a hay field for decades. Additional filed trips off site will be held on an alternate day of the week to visit unique local small farm systems. These field trips will complete the course hours. Exact days and times TBD with the group. This course will involve working on the Student Organic Farm, outdoors in cold and very warm temperatures and at times will involve frequent sitting, standing, bending at the waist, crouching, squatting, lifting heavy objects with assistance when needed, and some repetitive motions. Expect to get dirty, laugh, and have fun outside as we build our campus farm.
